Ingredients

  • 1 ripe organic pineapple
  • 100 g granulated sugar
  • 1 organic lemon
  • 3 cl PASTIS DE L'ILE DE RE
  • 15 cl sparkling water
  • 3 ice cubes

Method

  • Step 01
    Carefully wash the pineapple under cool running water.
  • Step 02
    Remove the rind.
  • Step 03
    Cover the rind with the sugar and ½ l water and simmer for 20 mins.
  • Step 04
    Remove from the heat and leave to infuse for 3 hours.
  • Step 05
    Strain and refrigerate.
  • Step 06
    Just before serving, pour over 3 cl of PASTIS DE L'ILE DE RE and 2-3 ice cubes, add 6 cl of pineapple peel juice and very cold sparkling water.
