Ingredients
- 1 ripe organic pineapple
- 100 g granulated sugar
- 1 organic lemon
- 3 cl PASTIS DE L'ILE DE RE
- 15 cl sparkling water
- 3 ice cubes
Method
- Step 01Carefully wash the pineapple under cool running water.
- Step 02Remove the rind.
- Step 03Cover the rind with the sugar and ½ l water and simmer for 20 mins.
- Step 04Remove from the heat and leave to infuse for 3 hours.
- Step 05Strain and refrigerate.
- Step 06Just before serving, pour over 3 cl of PASTIS DE L'ILE DE RE and 2-3 ice cubes, add 6 cl of pineapple peel juice and very cold sparkling water.
