Ingredients
- 8 medium chicories (vegetables)
- 10 cl PASTIS DE L'ILE DE RE
- 1 pinch of sugar
- 15 cl organic olive oil
- 10 cl water
- Fleur de sel de l'île de Ré
- Ground Maceron (to replace the pepper)
Method
- Etape 01Cut the chicories in half lengthways.
- Etape 02Pour the oil into a casserole dish and add the endives. Season with salt and pepper and the mace-ron. Brown the endives, then add the sugar. Mix well.
- Etape 03Pour in the PASTIS DE L'ILE DE RE. Do not flambé. Finally, add the water.
- Etape 04Cover and cook for 20 to 25 minutes. These endives are excellent served with fish.
