  • 8 medium chicories (vegetables)
  • 10 cl PASTIS DE L'ILE DE RE
  • 1 pinch of sugar
  • 15 cl organic olive oil
  • 10 cl water
  • Fleur de sel de l'île de Ré
  • Ground Maceron (to replace the pepper)

Method

  • Etape 01
    Cut the chicories in half lengthways.
  • Etape 02
    Pour the oil into a casserole dish and add the endives. Season with salt and pepper and the mace-ron. Brown the endives, then add the sugar. Mix well.
  • Etape 03
    Pour in the PASTIS DE L'ILE DE RE. Do not flambé. Finally, add the water.
  • Etape 04
    Cover and cook for 20 to 25 minutes. These endives are excellent served with fish.
