  • 200 g dark chocolate
  • 120 g organic brown sugar
  • 60 g sifted T65 flour
  • 50 g soft butter from Surgères
  • 3 fresh organic eggs
  • 4 tablespoons PASTIS DE L'ILE DE RE
  • 1 large fig, washed

Method

  • Step 01
    Melt the chocolate in a bain marie. Once melted, add the butter and stir until the mixture is smooth.
  • Step 02
    Preheat the oven to 140°C.
  • Step 03
    Separate the whites from the yolks of the 3 eggs. Whisk the egg whites until stiff and set aside in a cool place.
  • Step 04
    In a bowl, add the sugar and egg yolks. Mix well until the mixture turns white.
  • Step 05
    Add this whitened mixture to the melted chocolate and mix. Pour in the flour and mix to obtain a smooth dough.
  • Step 06
    Add the PASTIS DE L'ILE DE RE to the Preparation and mix.
  • Step 07
    Gently fold in the egg whites to aerate the mixture.
  • Step 08
    Pour into a mould. Cut the figs into quarters and place on the cake so that each slice has a piece of fig.
  • Step 09
    Bake the cake for 20 min. Leave to cool before eating.
